Comtes de Champagne Blanc de blanc 2007
It was Taittinger who began to aim for a slightly more elegant style by using more and more Chardonnay and eventually completely excluding the blue grapes. Taittinger must therefore have been honoured for having invented the Champagne type "Blanc de Blancs", and today this Comtes de Champagne is almost iconic. A wine that is only made in the special years and is always presented in a copy of an eighteenth century antique bottle. Stylish and historic at the same time!
100% Chardonnay exclusively harvested from Grand Cru fields on the Côtes de Blanc. Up to 10% of the wine is dishdened (33% new casks) for 4 months before the final wine is added together and ripens for at least 8 years towards degorgement and a gradually modest. Thus, in the last 6 released vintages, 8g/l has been released.
