Ruinart Blanc de Blanc NV
This Champagne Blanc de Blancs in the beautiful clear bottle, reminiscent of a merry journey back to the 18th century, is one of the signature wines from Ruinart’s historic cellars in Reims, and in the eyes of many also one of the finest blanc de blancs on the market. The grapes are harvested exclusively from fields with Premier Cru status primarily on the Côte des Blancs and Montagne de Reims, but also to a lesser extent grapes from plots around Sézannais and in the northernmost part of the Vesle valley. After pressing, the must is fermented in cement and stainless steel, after which the young wines from this year's harvest are mixed with up to 20-25% of the so-called wine de reserve from the 2 previous years' harvest to ensure continuity and house style at Ruinart. The wine then matures for a minimum of 36 months in a bottle before the precipitate is shot away and finished with a dosage of 9g. pr. liters. The result is an extremely reliable Champagne that is poured in a light golden shade with small fine bubbles and a lasting mousse. It smells clean and fine of acacia flower, citrus, peach and fresh apples, which go well with brioche, roasted almonds and other spices from the time in the bottle. Then almost full-bodied and creamy in the mouth where the relatively high dosage balanced the acidity and highlights the fruit in an extremely appealing and widely appealing way. Definitely a Champagne that works great for a welcome, but also with fullness and nerve enough that it can come to the table as an accompaniment to dishes with oysters and other seafood, for lightly salted hake or completely classic for a sweet-tongued Bercy.
