Bodegas Toro Albala PX Convento Seleccion 1968

Pedro Ximénez - colloquially PX - is used throughout Spain to achieve sweet wines with an astonishing concentration and sweetness. The grape is perhaps best known for contributing sweetness to 'Cream Sherry', but in practice the best specimens are made in mountainous areas such as here in the province of Córdoba, where the grapes are exposed to greater temperature fluctuations and retain more of their natural fruit acid. The producer Toro Albalá thus has as his specialty to work with the green PX grape, which puts its unmistakable mark on this masterpiece. Since the autumn of 1968, the wine has given way to approx. 47 years on American oak barrels. At that time, a concentration of everything is achieved, and the spicy, complex aroma, overwhelming sweetness, impressive offset acidity and never-ending aftertaste therefore speak their clear language! At the same time, it is all lifted by a wonderfully almost floating lightness that is hard to describe but simply just has to be experienced!
