Pascal Jolivet Pouilly Fume Loire 2016
In 1990, Pascal Jolivet winery was established in its own name after a number of years as an agent for the Champagne house Pommery. Pascal Jolivet was quickly reckoned among Sancerre's innovative circle of skilled winemakers. For example, Jolivet moved early to ferment its wines on the natural yeast from the grape skin as opposed to fermentation on chemical, conventional yeast strains, which combines freshness and fullness with personality and terroir. Today, Pascal Jolivet makes approx. half of his wine on grapes from own markers. The rest is made from purchased grapes or mostly from selected producers in the area. Pascal Jolivet owns approx. 65 hectares of vineyards, including 42 ha. in Sancerre, 8 ha. in Pouilly Fumé and 15 ha. and Touraine.
