97-98 points - Parker / Wine Advocate Pedro Ximénez - colloquially PX - is used throughout Spain to achieve sweet wines with an astonishing concentration and sweetness. The grape is perhaps best known for contributing sweetness to 'Cream Sherry', but in practice the best specimens are made in mountainous areas such as here in the province of Córdoba, where the grapes are exposed to greater temperature fluctuations and retain more of their natural fruit acid.
