This wine breaks our rules, as we blend in some flamboyant, youthfully fruity Pedro Ximénez (PX) into our ancient, dry, nutty Oloroso VORS with more than 30 years of average age. The flavor complexityfrom this improper marriage is outrageous, the texture quite seductive. It is the perfect not-dry wine for those who only drink wines that are not sweet.
