Australia has been producing eau-de-vie sugar cane for almost 150 years and has gained its rightful place on the world space map. This room is distilled in pot stills, Plantation Australia 2007's great aromatic complexity owes its personality to the special yeasts used during fermentation. Spirits are first fermented for 12 days with Schizosaccharomyces pombe, a very rare yeast in the rum world and dunders. It is then followed by a three-day fermentation with Saccharomyces cerevisiae.
Plantation Australia was distilled in 2007 and was first stored for 13 years in ex-bourbon casks in the cellars of the Beenleigh Artisan Distillery. The 21 barrels selected by Alexandre Gabriel then sailed to Javrezac, in the Charente region of France, where the rooms were stored for an extra year in 400 liter French oak barrels at Maison Ferrand.
In the plantation signature style, this dual aging technique highlights the very expressive and complex appeal of this 14-year-old Australian space.
