This is one of the 10.000 yearly bottles of distilled wine which are the result of long years of effort, og the labours of generation after generation from whom wine growing has become both a vocation and a way of life. Ximénez-Spinola owes its prestige to its specialization in wines obtained from the pressing of sun-dried Pedro Ximénez grapes high in levels of natural fructose, which after years of complex selection finally acquire the rigth level of our house.
It was, and still remains, a tradition amongst the "almacenistas" of Jerez to destill wines from certain casks in order ti obtain "fine wines spirits from the pot still" capable of providing sufficent quality and alcoholic content to produce an authentic "brandy distilled from pure wine". We honestly say that in our case this custom dates back to the 1729, the date of our first documented shipment of"wine spirit". However, given the impossibility of commercialising, our limited stock of distilled Pedro Ximénez, this "Criadera" of old chestnut barrels was created back in 1948.
Until1939 the predominant wood in the spanish cooperage was chestnut, In fact chestnut, our family oreserved 84 barrels built before 1936. All those casks are top up periodically with wines of our house to keep providing flavours and aromas of this raw material in addition to the ones already present in the distillation of the same grape. All that makes possible that this distillate has a unique balance between the alcoholic perception of its 40% abd the sensations, flavours and aromas proper to the variaty Pedre Ximénez.
These peculliar chestnut casks constitute our "Criadera" 1948, and they are classifild and marked as D.P.X. (Destilattum Petrus Ximenibus). Successive entries, duly recorded year after year in our daily tasting register highlight. The elegance of its amber tones and well balanced notes of raisin, along with a fine hint of the wood where the distillate has been aged. All these flavours and aromas make it possible to maintain in mounth the intensity of its aftertaste absolutely unforgettable.
