The Pinot Noir grapes for this wine come from the oldest vineyards that Chat Sauvages has, and here the vines are up to 40-50 years old. The owner of the house Günter Schulz has a great fondness for Burgundy, so in 1992 he got the idea to make a wine that was as good as the best from Burgundy. The wine had to be not only on par with the Burgundy wines, but the best, so it was only in the year 2000 that a vineyard came up for sale, 8 years after he started his prestigious project.
Subsequently, it has become 6 vineyards spread over 7.5 hectares, where 60% are Pinot Noir grapes, 35% Chardonnat and the last 5% are Riesling. So the annual production of wines is approx. 28,000 bottles, which are 6 different red wines, 1 white wine, 1 rose wine and 1 sparkling wine (sparkling wine)
