Santa Sofia's headquarters and cellars are located in Piedmont, near Verona, Italy. Pedemonte is one of the most beautifully situated and mildest zones in the classic Valpolicella area. Through generations, Santa Sofia has built up and maintained a great reputation as a small producer with high quality and has for many years produced great wines of the very highest quality. Santa Sofia's wines are the result of a perfect blend of old traditions and years of experience added to modern technology. This wine is produced from the grapes Corvina (70%), Rondinella (30%)) grown in the Valpolicella area of the Veneto region of Italy. This Ripasso has been aged 9 months in oak casks and 3-6 months in the bottle before release. The wine is produced using the "Ripasso" method, which directly translates to "passed through again". The term means adding the unpressed skins from the Amarone wines after these wines on dried grapes have finished their fermentation. This gives extra flavor, alcohol, body, character and tannin to the Valpolicella. It is an incredibly beautiful wine with an intense dark ruby red color, an elegant aroma with notes of spices, a harmonious, full and fruity taste and a long and pleasant aftertaste.
