Since the late nineties, Teo has felt the need to choose a yeast strain that can characterize his beer. The research into a number of fermentations leads him to identify a particular yeast that is strongly characteristic, although of an almost indomitable character.
This yeast strain is isolated from the fermentation of Islay Scotch whisky. Its effervescent nature requires many years of testing to finally be able to use it, and in 2004 the recipe for a new beer was born, which will first express a fundamental phase of this long journey. Thus Elixir was born and with her one of the great Baladin classics.
