Are you looking for a Champagne with authenticity, precision, and character? Then you should get to know Grains de Celles Extra Brut – the signature cuvée from Champagne house Pierre Gerbais, located in the charming village of Celles-sur-Ource in the southern Côte des Bar.
This cuvée is made from a unique blend: 50% Pinot Noir, 25% Chardonnay, and 25% Pinot Blanc Vrai – the rare white pinot variety that the house has preserved and refined with great precision. The grapes come from a mosaic of parcels, cultivated for over a decade without pesticides or herbicides – not as certified organic, but as a conscious, sustainable practice that respects both soil and vine.

Vinification and Style
The wine is from the 2020 harvest and fermented in temperature-controlled stainless steel tanks to preserve its clean, crisp fruit. After bottle fermentation, it is aged for 30 months sur lie, which creates the fine bubbles and classic Champagne texture. Disgorged in April 2023 and bottled with a low dosage of just 4 g/L, it clearly falls within the Extra Brut category – dry, elegant, and precise.

Tasting Notes – Grains de Celles in the Glass
The nose opens with delicate white flowers, lemon zest, and a hint of salty sea breeze, followed by notes of ripe white peaches, freshly baked brioche, and lightly toasted hazelnuts. The palate is crisp, mineral-driven, and vibrant, with high, taut acidity and a silky mousse. The dosage ties everything together with precision, and the finish is long, dry, and elegant.

Maison Pierre Gerbais traces its roots back to the 1800s and is today run by 8th-generation winemaker Aurélien Gerbais. For generations, the family has worked with deep respect for nature, and under Aurélien’s leadership, the house has solidified its status as one of the most visionary producers in the Côte des Bar.
Pierre Gerbais is particularly known for its use of Pinot Blanc Vrai, a variety very few Champagne houses work with. It is this grape, together with the natural approach in both vineyard and cellar, that gives the wines their distinctive purity and energy – setting them apart from the crowd.
