Storage and taste
As a result of 10 hours of cold maceration on the skins, the wine very quickly acquires its discreet strawberry red colour, which matches its primary aromas of violets and fresh red berries in all aspects. In addition, a full 30 months of bottle aging adds undertones of almonds, spicy salts and ripe fruit, which on the tongue are met by fine small bubbles, a fresh minerality and a long, dry aftertaste in sublime balance.
This is by all accounts a flavorful and persistent wine that we suggest enjoying the wine within 10 years from the disgorging date. It could be before, during and after a delicious tapas menu, with light meat and fried vegetables - or as luxury bubbles on a beautiful summer day, if not for Christmas or New Year's Eve!
