The whisky has matured in a carefully balanced combination of ex-bourbon casks, port wine casks, and STR casks (Shaved, Toasted, Re-charred). This interplay adds both depth and complexity, elevating the tasting experience to new heights.
The result is a round, smooth, and inviting whisky – crafted for both the curious beginner and the seasoned enthusiast.

Little Isle is made with respect for nature and love for the craft. It is non-chill filtered, naturally colored, and produced exclusively from organic barley grown on Funen. The barley is cultivated on fields just a few kilometers from the distillery.
It is a true tribute to the terroir of Funen and to the emerging Danish whisky tradition.

Tasting Notes

Nose: Light and elegant. Fresh fruit, vanilla, and a hint of honey.
Palate: Soft and rounded. A fine balance of ripe apples, sweet grain, caramel, and subtle cask notes.

The Story Behind Nyborg Distillery

Nyborg Distillery is located in a historic building by the harbor in Nyborg – a former railway workshop hall that for over 125 years buzzed with life and labor.
Today, its rustic walls provide the setting for a modern distillery where craftsmanship, sustainability, and passion go hand in hand.

Every drop of whisky is created with care for both taste and the environment. Everything is organic, and much of the barley is grown in fields visible from the distillery.
Even the wood for many of the casks comes from 150–200-year-old trees from the island – a symbol of respect for nature and the local heritage.
