Little Isle is matured in a carefully balanced combination of ex-bourbon, port and STR (Shaved, Toasted, Re-charred) casks. This combination gives the whisky a beautiful balance of freshness, sweetness and depth, with the casks playing harmoniously together without overpowering the character of the distillate.

The result is a round, mild and welcoming whisky with a broad appeal. Perfect as an introduction to Danish single malt – but with enough complexity to satisfy the experienced whisky enthusiast.

Little Isle is made exclusively from organic barley from Funen, grown a few kilometers from the distillery. It is bottled at 43%, not chill-filtered and with natural color. An honest whisky that celebrates the Funen terroir and the burgeoning Danish whisky tradition.

Tasting notes

Aroma: Light and elegant with fresh fruit, vanilla and a hint of honey.

Taste: Soft and rounded. Ripe apples, sweet grain and caramel are balanced by subtle and well-integrated cask notes.

Finish: Long, silky and lightly spiced with vanilla and fruity warmth that rounds off the experience beautifully.

The history of the house

Nyborg Destilleri is housed in a historic building by the harbor in Nyborg – a former railway workshop that for more than 125 years was buzzing with life and craftsmanship. Today, the rustic setting forms the basis for a modern, organic distillery with a focus on quality, sustainability and curiosity.

All whisky is produced with care for both taste and the environment. Much of the barley is grown in fields that can be seen from the distillery, and many of the casks are made from 150-200 year old Funen trees. This gives the whisky a clear local connection and a unique character.

At Nyborg Destilleri, it’s not about reaching a destination – it’s about the journey. Little Isle is a beautiful step on the road to ever more sensuous, Funen and adventurous whisky.
