Plantation Vintage Collection N°2 “Under the Sea” Jamaica 2007 is an exclusive one-off release from Plantation Rum – created for collectors and enthusiasts seeking true Jamaican character combined with the house’s iconic double maturation. A rum with depth, terroir and an impressive aging history totaling 15 years.

For more than 20 years, Master Blender Alexandre Gabriel has traveled the world to find the most authentic rum traditions. For this limited edition, he crossed the ocean to the shores of Jamaica and hand-picked just 28 casks at Clarendon Distillery. The result is a rum that captures the essence of Jamaican pot still craftsmanship.

The rum was distilled in 2007 in a Vendome double retort pot still after 3-4 days of fermentation in open vats – a method that highlights the distinctive Jamaican aromatics and elegant ester profile. First aged 13 years in the tropical climate of Lionel Town, Jamaica, where intense heat and humidity accelerate maturation, and then shipped to Javrezac in southwestern France for a further 2 years of continental aging in French Ferrand oak barrels.

This double aging provides a remarkable balance of power and finesse – tropical intensity meets French elegance. Bottled at 48.4%, the rum retains both structure and complexity.

Tasting notes

Aroma: Fresh tropical fruits, ripe banana and pineapple combined with vanilla, light caramel and a hint of spice.

Flavor: Rich and balanced with notes of mango, citrus, honey and roasted nuts. The distinctive Jamaican pot still profile provides lively esters and complexity.

Finish: Long and warm with elegant oak notes, light sweetness and a spicy finish.
