Thy PX & Oloroso Cask Single Malt Whisky 2025 Edition is an organic, cask-strong and deeply characterful whisky, created in the harsh and beautiful landscape of Northwest Jutland. A limited edition for connoisseurs – and for those who want to experience true Danish whisky with warmth, depth and authenticity.

The whisky is matured for a full 5 years in a combination of Pedro Ximénez and Oloroso sherry casks, adding complexity, sweetness and structure. Bottled at natural cask strength of 51.5% and without compromise – just as whisky should be.

Only 1,415 bottles have been bottled, making this edition a coveted collector’s item and an obvious choice for both enjoyment and the cellar.

The taste of Thy
The intense sweetness of the PX sherry meets the dry and nutty elegance of the Oloroso cask. The beech-smoked malt adds a mild, earthy smoke that elegantly ties everything together and gives the whisky its very own Nordic signature.

Tasting notes

Aroma: Dark raisins, figs and candied orange peel. Layers of caramel, chocolate and ripe fruits followed by nuts, tobacco and dried fruit.

Flavor: Rich and creamy mouthfeel with sweet sherry, brown sugar, chocolate and ripe fruits. The light beech smoke adds warmth and depth without dominating.

Finish: Long, soft and harmonious with a subtle salty note – like a cool breeze from the North Sea.

The history of the house

Thy Distillery is located at Gyrup Farm in northwestern Denmark, surrounded by the North Sea, the Limfjord and the open, wind-blown fields. The Gyrup family grows their own organic grain, which is milked, mashed, fermented and distilled directly on the farm.

Everything happens in one place – from field to bottle. This makes Thy one of the world’s few single estate distilleries where nature, craftsmanship and passion merge in every drop. The result is honest, uncompromising whisky with a clear origin and taste of Denmark.
