Oloroso Cask Finish - A Spanish Sherry Butt Journey
Bimber Distillery, founded by dedicated whisky lovers, is on a mission to create high-quality single malt whisky with a distinct character. What sets us apart is our unwavering commitment to traditional methods that are rarely seen in the whisky world today.
The Bimber Journey:
Our whisky-making journey begins at our very own single farm, where 100% of our barley is cultivated. From there, the barley goes through the time-honored process of floor malting, followed by hand-mashing and a slow fermentation period lasting seven days in our wooden washbacks—crafted with care at our very own cooperage.
To ensure the truest essence of the spirit, we employ direct fire to heat our small copper pot stills. The maturation process takes place in hand-selected casks, chosen to capture the spirit's journey and character.
Finally, the culmination of our craft is witnessed as we bottle our whisky on-site at our distillery, a testament to our dedication to quality and every stage of the process.
Batch 3 - Oloroso Cask Finish:
Our Batch 3 Single Malt London Whisky is a small batch release of 980 bottles. What makes this release particularly special is its maturation in two types of casks. This whisky has been finished in Spanish Oloroso sherry butts, which impart rich and complex flavors to the spirit, making for a truly unique and captivating whisky experience.
