Distilled in March 2017 and matured for eight years in a 1st fill Oloroso sherry butt, the whisky has significant depth, richness and complexity. It was bottled in August 2025 at full cask strength of 56.3%, without cold filtration and with natural color. The result is an authentic and uncompromising taste experience – exactly as Nyborg Destilleri wants it.

Tasting notes

Aroma: Deep and intense with dark raisins, dried figs and caramelized nuts. Notes of orange peel, leather and dark chocolate add depth and elegance.

Flavor: Full-bodied, round and rich. Classic Oloroso sherry notes with dried fruit, dark syrup and toasted oak. A light spicy expression with cinnamon and a subtle hint of smoke creates balance and complexity.

Finish: Long, warm and persistent with espresso, cocoa and sweet tobacco. A vinous and calm finish that captures the feeling of twilight.

The history of the house

Nyborg Destilleri is located at Nyborg Harbor in the middle of Funen in historic buildings where freight trains used to be repaired. The distillery was founded in 2009 and since 2017 has been housed in the old workshop halls – today filled with the smell of malt, oak and adventure.

All whisky is produced organically with great respect for nature and craftsmanship. Much of the barley comes from fields a few kilometers from the distillery, and several of the casks are made from 150-200 year old Funen oak trees. This gives the whisky a unique local anchorage and character.

For Nyborg Destilleri, it’s not about the destination, but the journey. Skumring Vintage 2017 is one of the most evocative chapters – a Danish single malt to be enjoyed slowly as the light fades.
