Bimber Distillery Ex-Bourbon Batch 3 is a characterful and artisanal single malt whisky from London. This release clearly demonstrates Bimber Distillery’s philosophy: uncompromising quality, traditional production methods and full control over the entire process from field to bottle.

This Batch 03/2021 is matured exclusively in ex-bourbon oak casks, giving the whisky a great balance between fruity notes and classic cask tones. American white oak(Quercus Alba) adds sweet aromas of vanilla, caramel and soft spices that elegantly support the natural fruity character of the distillate.

Bimber works according to a rare grain-to-glass philosophy. The journey starts on the distillery’s own farm, where 100% of the barley is grown. The grain is traditionally floor-milled, hand-mashed and slowly fermented for up to seven days in handmade wooden washbacks. Distillation is done by direct fire heating, giving extra depth and character to the whisky.

After maturation, the best casks are selected and then carefully blended in the distillery’s own vats before bottling. This small batch consists of only 5000 bottles, making this release particularly interesting for collectors and whisky enthusiasts alike.
