Chat Sauvage Assmannshausen Pinot Noir 2016 is a wine for the discerning Pinot Noir lover looking for finesse, depth and elegance at its best. It combines German precision with a love of Burgundy, resulting in a red wine that both impresses and seduces from the first encounter.

The grapes for this wine come from the house’s oldest parcels in Assmannshausen, where the vines are between 40 and 50 years old. This results in lower yields but far greater concentration, complexity and character in the grapes. Pinot Noir thrives in the Rheingau, and Assmannshausen is considered one of Germany’s most classic areas for the variety.

With Chat Sauvage, winemaker Günter Schulz has had a clear ambition: to create Pinot Noir wines that can measure up to the great models from Burgundy. All work in the field and cellar is done with an uncompromising focus on quality, and production is deliberately kept small to ensure maximum control and artisanal precision. Today, the 2016 vintage is beautifully matured, but with plenty of life and structure for continued development.

Tasting notes

The color is clear and ruby red. The nose offers elegant aromas of red berries such as cherry and raspberry, combined with forest floor, light smoke, spices and fine barrel notes. The taste is refined and balanced with silky tannins, vibrant acidity and a long, persistent aftertaste that testifies to both old vines and great care in vinification.

An ideal companion for game, duck, veal, mushroom-based dishes or mature cheeses. Best served at 16-18°C.

History of the house – Chat Sauvage

Chat Sauvage was founded by Günter Schulz, driven by a deep fascination with Burgundy and the enormous potential of the Pinot Noir grape. After eight years of determined searching, the project took shape in 2000 with the purchase of the first vineyard. Today, the house has 6 vineyards spread over 7.5 hectares, of which approximately 60% is planted with Pinot Noir. Annual production is limited to around 28,000 bottles, emphasizing the house’s exclusive and uncompromising approach to quality.
