This single malt is matured in casks of Danish oak – Quercus robur danica, a rare type of oak that gives the whisky a very special character. The Danish oak contributes elegant sweetness, structure and fine tannins that beautifully support the fruity and clean expression of the distillate.

The whisky is made from organic barley grown just a few kilometers from the distillery, and the oak for the casks comes from 150-200 year old Funen forests. The result is a harmonious, rounded and characterful whisky with a clear and proud Danish signature.

Danish Oak is bottled at 46%, is not chill-filtered and has natural color. Nothing is removed, nothing is hidden – just pure whisky, exactly as nature and time have created it.

Tasting notes

Aroma: Soft and inviting with notes of pear and apricot, followed by roasted hazelnuts and a subtle sweetness from the Danish oak.

Flavor: Round and harmonious with fine tannins, light spice and an elegant balance between fruit and wood.

Finish: Long, warm and delicate – a refined finish that lingers and invites the next sip.

The history of the house

Nyborg Destilleri is located in the middle of Funen by the harbor in Nyborg in a historic building that previously served as a railway workshop. For more than 125 years, the place was buzzing with life and craftsmanship – today it buzzes with passion, fresh distillate and slowly maturing casks.

The distillery works uncompromisingly organic and with strong local roots. The barley is grown in nearby fields and the wood for many of the casks comes from the island’s own forests. The philosophy is clear: It’s not about the destination, it’s about the journey – and the joy of creating whisky with soul.
