Bimber Ex-Bourbon Batch 4 Single Malt London Whisky 51.2% 04/2023

Modern London whisky created with uncompromising craftsmanship. Bimber Ex-Bourbon Batch 4 is a small batch single malt, matured exclusively in ex-bourbon oak casks and bottled at a powerful 51.2%. An intense and characterful release where classic bourbon barrels meet Bimber’s deeply traditional production style.

This 04/2023 release is bottled in March 2023 and released in 7,000 bottles. Aging in American white oak (Quercus Alba) casks gives the whisky layers of vanilla, caramel sweetness and fresh oak that play perfectly with the distillate’s natural fruitiness and structure.

The result is a rich and energetic single malt with a distinct identity – a whisky that shows how far dedicated craftsmanship and respect for the raw material can take London as a whisky region.

Tasting notes

Aroma: Fresh and lively with vanilla, honey, citrus, ripe pear and slightly spicy oak.

Taste: Rich and intense with creamy vanilla, caramel, sweet malt and fresh fruit, balanced by textured oak and light spice.

Finish: Long and warm with lingering vanilla, oak and a nice fruit sweetness.

Bimber Distillery – Traditional craftsmanship in London

Bimber Distillery was founded by passionate whisky lovers with a clear mission: to produce single malt whisky with character using traditional methods rarely seen today. The journey starts on their own farm, where 100% of the barley is grown and then floor malted in the traditional way.

It is then hand-mashed and slowly fermented for seven days in wooden washbacks that are handmade in the distillery’s own cooperage. Distillation takes place in small copper pot stills heated by direct fire and the whisky is matured in carefully selected casks. Bottling takes place at the distillery – full control from field to bottle.
