Double barrel aging – 3 years bourbon and 11 years cognac

Foursquare Sassafras undergoes a refined two-step aging process that gives the rum its remarkable complexity. First, it is aged for 3 years in ex-bourbon barrels, where it builds structure, vanilla sweetness and classic notes of caramel and oak. This is followed by a full 11 years of further maturation in ex-cognac casks, adding elegance, dried fruit, spice and a silky depth.

This combination creates a rum with both power and finesse – a balanced and nuanced experience where every detail is honed through 14 years of patient aging in a tropical climate.

Single Blended – pot still and column still in perfect harmony

Sassafras is a true Single Blended Rum, which means it is produced and blended at the same distillery. It combines rum distilled on the traditional twin column Coffey still with rum from classic copper pot stills. The pot still distillate adds richness, depth and intensity, while the column still distillate adds elegance and structure.

Tasting notes

Aroma: Intense and complex with notes of dark caramel, roasted nuts, dried apricots, figs and a hint of cognac-inspired fruitiness. Underlying notes of vanilla, spicy oak and light cocoa.

Flavor: Rich and concentrated with layers of brown sugar, orange zest, dark chocolate and ripe stone fruit. The cognac casks contribute elegant dried fruit and spicy nuances, while the bourbon casks add warmth and sweetness.
