Highland Park Single Cask Saxo 15 years is the third exclusive Danish bottling in Highland Park’s acclaimed Founders Series. A single cask whisky created for connoisseurs and collectors – powerful, full of character and with a personality that matches the name Saxo.

The name is no coincidence. Like the historical works of Saxo Grammaticus, this whisky exudes depth and complexity. With distinctive notes of leather grease and dark elegance, it brings to mind neatly bound books and Nordic history. It’s a whisky that stands independently and uncompromisingly – just like the description of the classic Dane: independent and all its own.

The whisky is aged in a puncheon – a less common cask type with about the same volume as a sherry butt, but with a shorter and more chubby shape. This cask type provides a special interaction between wood and spirit and contributes to an intense and complex flavor profile. The result is a deep, spicy and nuanced Highland Park with extra layers of character.

Highland Park is one of the most northerly distilleries in the world, located on the Orkney Islands. Founded in 1798 by Magnus Eunson – rumored to be a priest by day and an illegal distiller by night – the distillery has built a reputation as one of the world’s most respected whisky houses. The year 1798 marks the year the authorities discovered his enterprise – not necessarily the start of production.

Highland Park is known for its use of custom-made sherry casks from Jerez, which first age oloroso sherry for around two years before being shipped to Orkney. The whisky typically has an elegant, balanced smoke as the malt is peated with heathery peat from the Hobbister heath. The light heather smoke is a signature note and provides an aromatic and floral smoke profile that sets Highland Park apart from other distilleries.

Aroma: Complex notes of leather, dried fruit, sherry and spicy oak. Underlying notes of heather honey and subtle smoke.

Flavor: Rich and textured with layers of dark caramel, raisins, spices and a hint of leather fat. The Puncheon cask adds depth and intensity.
