Holm Oak Chardonnay 2025 is an elegant and refined white wine from cool Tasmania. Here the inspiration is clearly drawn from Burgundy. The style is fresh, balanced and far from the heavy, overseas style. This is Chardonnay with finesse, precision and beautiful complexity.

The wine comes from the Tamar Valley, which is one of Australia’s coolest wine regions. The cool climate allows for slow ripening and a natural freshness in the grapes. Holm Oak works with two different Chardonnay clones, which gives extra depth and complexity to the wine.

Fermentation takes place in French oak barrels without the addition of yeast. The wine is then aged for 9 months in both new and used barrels. Battonage is occasionally used, which gives a rounder texture and more body. The result is a wine with both freshness and creamy structure.

In the glass, the wine appears with a clear straw yellow color. The aroma is elegant and slightly floral. Notes of nectarine and citrus emerge. There is also a subtle hint of vanilla from the barrel.

The taste is fresh and well-balanced. Notes of stone fruit and melon recur. The acidity is crisp and cleansing. The cask character is subtle and well-integrated. The long contact with the yeast residue gives a pleasant mouthfeel and fine complexity.

Holm Oak Chardonnay 2025 is ideal with fish, shellfish and light meat. It also goes well with dishes with butter or light creamy sauces. A modern Chardonnay with classic inspiration and great drinking pleasure.
