The grapes for this Weissburgunder are grown on limestone soil, which gives the wine a distinctive minerality and a lean, precise structure. Fermentation takes place spontaneously in tonneaux, where the wine’s natural yeast strains are allowed to work freely. The wine is then aged for a full 10 months on the lees, adding complexity, creamy texture and extra depth. It is bottled unfiltered, preserving all the nuances and textures in the bottle.
