Bognæs Vingaard KAOS 2025 is an intense and characterful Danish white wine from Tuse Næs near Holbæk. Made from 100% Solaris grapes, this wine showcases just how exciting Danish wine can be when ripe grapes, spontaneous fermentation, and barrel aging are allowed to work in harmony.
KAOS 2025 follows the same winemaking process as the first KAOS from 2023. The grapes are harvested late to achieve beautiful ripeness, concentration, and body. The wine is then fermented naturally and aged for 9 months in French oak barrels. This results in a Danish white wine with remarkable depth and a style quite different from the classic, light Solaris.
However, there is one important difference between the two vintages. In 2023, some of the grapes were affected by noble rot, also known as botrytis. This is not the case in 2025. KAOS 2025 is produced without botrytis, but using the same winemaking methods and with the same ambition as the original wine.
Danish Solaris with 14.5% alcohol
With its 14.5% alcohol, KAOS 2025 is an exceptionally powerful Danish white wine. The late harvest allowed the Solaris grapes to achieve great ripeness and concentration. At the same time, the natural freshness ensures that the wine retains its balance and vitality.
Solaris is often associated with fresh and aromatic Danish white wines. KAOS takes a more full-bodied and gastronomic approach. Here, the grape is allowed to showcase just how much structure, intensity, and complexity it can deliver under the right conditions.
Spontaneously fermented and aged in French oak barrels
After harvest, natural yeast is allowed to initiate fermentation. Spontaneous fermentation helps create a more vibrant and complex profile, allowing the character of the grapes and the vintage to shine through.
The wine is then aged for 9 months in French oak barrels. Barrel aging adds structure, depth, and spicy nuances. At the same time, the ripe Solaris fruit takes center stage in the wine.
The combination of late-harvested Solaris grapes, spontaneous fermentation, and barrel aging makes KAOS 2025 an exciting Danish white wine for the curious wine lover. It is a wine that showcases a more ambitious and powerful side of Danish winemaking.
KAOS 2025 with Food
Bognæs Vingaard KAOS 2025 is made to be paired with food. The wine’s body and structure make it an ideal match for grilled fish, salmon, and other hearty fish dishes. It’s also an exciting choice for chicken, veal, and light meats.
Try it also with creamy sauces, mushroom dishes, or aged cheeses. The combination of ripe fruit, freshness, and oak offers many gastronomic possibilities.
Serve the wine at 10–12°C. KAOS should not be served ice-cold. A slightly higher temperature opens up the wine and allows the fruit, oak, and more complex aromas to shine.
Tasting Notes
Aroma: Intense and aromatic with ripe yellow apples, apricot, and exotic fruits. Barrel aging contributes elegant spicy notes and subtle toasted nuances.
Palate: Full-bodied, concentrated, and powerful with ripe Solaris fruit. Yellow apples, apricot, and tropical fruits are balanced by fresh acidity. The French oak barrels add structure, spice, and extra depth.
Finish: Long and lingering with ripe yellow fruit, freshness, and elegant spicy notes. The 14.5% alcohol contributes to the wine’s full-bodied and concentrated character.
The Story Behind the Name KAOS
The name KAOS stems from the dramatic harvest of 2023. The plan was all set, but shortly before harvest, the wine press at Ørnberg Vin broke down. This meant that Laura and Kristian suddenly had to change their entire harvest plan.
After a hectic day of rearranging logistics and plenty of improvisation, they managed to have the grapes pressed at Dyrehøj Vingaard. It wasn’t until late at night that work could continue. Out of the chaos of that day emerged a wine that was very aptly named KAOS.
KAOS 2025 builds on the concept and winemaking methods of the original wine. However, this vintage has its own distinct character. Unlike the 2023 vintage, the 2025 grapes were not affected by botrytis.
The Story of Bognæs Vingaard
Bognæs Vingaard is located on Tuse Næs near Holbæk and is run by Laura and Kristian Zander. The first vines were planted in 2018, and since then, the winery has developed into an exciting local producer of Danish wine.
The vineyards grow varieties such as Solaris, Souvignier Gris, and Pinot Noir. The work is carried out with great respect for nature and a focus on craftsmanship. The goal is to create wines that showcase the potential of the Danish climate and the unique terroir of Tuse Næs.
Bognæs Vingaard does not simply seek to replicate wines from the classic European wine regions. The ambition is to create Danish wine with its own distinct identity. KAOS is a prime example of this philosophy. Here, ripe Solaris grapes, spontaneous fermentation, and French oak come together in a powerful and distinctive Danish white wine.
