The wine is then aged for a full 10 months on the lees in the same barrels and only bottled after a year of maturation without filtration or clarification.

Tasting notes

The aroma is complex and intense with notes of smoke, roasted coffee beans, citrus fruits, tart apples and ripe pears. Beneath the fruity layers are chalky mineral nuances, stone flour and elegant yeast notes from the long ageing on the lees.

In the mouth, the wine is powerful, tight and precisely focused. The chalky minerality provides structure and energy, while the fruit balances the wine’s concentration. Notes of citrus, apple, pear and subtle roasted notes develop throughout the long palate, finishing with impressive length and complexity.
