Thy Whisky Vesterhav is a distinctive Danish single malt whisky that captures the spirit of the rugged West Jutland coast. The whiskey is made from 100% organic grain grown on the distillery’s own fields in Gyrup, Thy. It has been aged for between 4 and 8 years in bourbon casks and is bottled at 50% alcohol.
Vesterhav is a Limited Edition from 2026 with only 3,450 bottles. A special release for the whiskey lover who appreciates Danish craftsmanship, natural ingredients, and an elegant smoky character.
Inspired by the winds, sea, and smoke of the North Sea
Along the west coast of Jutland, open expanses, sand dunes, and the roaring North Sea meet. It is precisely this landscape that has inspired Thy Whisky to create Vesterhav.
The whisky combines classic peat smoke with a smaller proportion of wood-smoked malt. This yields an intriguing smoky character with both maritime and softer, toasty nuances.
The smoke is balanced so that it doesn’t overpower the whiskey’s fruity and sweet notes. The result is a harmonious Single Malt clearly inspired by the Danish west coast.
Aged 4–8 years in bourbon casks
Thy Whisky Vesterhav is matured exclusively in ex-bourbon casks. The various casks were aged for between 4 and 8 years before the whisky was blended.
The bourbon casks contribute notes of vanilla, honey, and warm spices. They also impart a rounded sweetness that pairs beautifully with the smoke.
By combining casks from different vintages, the distillery has created a whisky that offers both freshness and maturity. The smoked malt provides character, while the bourbon casks add balance.
Organic malt with peat smoke and beechwood smoke
Vesterhav is made from several different types of malt. The blend consists of 45% peat-smoked malt, 45% regular malt, 5% beech-smoked malt, and 5% malt from the old Danish barley variety Imperial.
The peat-smoked malt adds a light, mineral, and maritime character. The beechwood smoke provides a more rounded smoky nuance, inspired by traditional Danish smokehouses.
The Imperial barley contributes body and fruity notes. Together with the regular malt, it creates a beautiful balance in the whiskey.
All grains are organic and grown on the distillery’s own farm in Thy.
Tasting Notes – light peat smoke and maritime freshness

Nose: Fresh fruit, vanilla, and honey meet gentle peat smoke. Subtle hints of sea salt, citrus, and spicy oak add extra character.

The History of Thy Whisky Distillery
Thy Whisky Distillery is located on the family farm Gyrup in northwestern Jutland. Here, the family has established a Danish whiskey distillery focused on organic farming, local ingredients, and traditional craftsmanship.
The distillery operates on the “Single Estate” principle. This means that the grain is grown, malted, mashed, and distilled on the farm.
Thy Whisky has also developed its own approach to distillation and malting. They experiment with both modern and traditional Danish grain varieties, as well as various smoking techniques.
Vesterhav is a fine example of this philosophy. A whisky where local ingredients and inspiration from the nature of West Jutland come together in a distinctive bottling.
