Barley is at the heart of malt whisky, and at Waterford it’s not just a raw material, but an identity. Lakefield Edition 1.1 is distilled exclusively from barley from Lakefield Farm in County Laois. Here the barley grows in deep, well-drained clay soils formed by limestone and sandstone. A terroir that consistently delivers barley of exceptional quality.

Southern Ireland benefits from the mild influence of the Gulf Stream. Humid, temperate air and fertile soils create optimal growing conditions. Waterford’s Single Farm Origin range explores this area farm by farm, documenting the importance of terroir with almost scientific precision.

The whisky is made with long fermentations and slow distillation. Each process is designed to bring out the natural character of the barley. The result is a complex, intense and honest single malt whisky, bottled at 50% alcohol for maximum depth of flavor.

History of the house
