Pure simple Jamaican rum
In Jerez de la Frontera, where sherry is made, the word pagos means "vineyards", and as you've probably guessed, this Jamaica rum is aged in sherry casks. It is not just a matter of a finish; the rum is aged exclusively in sherry casks. Specifically, they are oloros casks that come straight out of the solera, meaning they have contained real sherry for about 30 years, and not just new sherry-seasoned casks.
The high Esters art:
Produced using the same unique and secret methods since the 18th century. The result is a spirit with an unmistakable aromatic profile, thanks to a very high level of esters.
Fully matured in the Tropics:
The tropical conditions for the ageing of this rum create an angel´s share 4 time greater than ageing in Europe.
Avant-garde in ageing:
Pagos marks the beginning of a new era in our long history, which began in 1753. This rum was fully matured exclusively in 500-liter sherry butt previously used for ageing high quality Bodegas Fundador sherry in some of the most famous bodegas in Andalucia. Pagos is the marriage between a unique and rich rum and the best sherry casks.
Wild Fermention:
Extremely extended fermentation with natural yeast.
Only Pot Still:
100% artisanal distillation in copper double retort pot stills.
Spring Water:
Throughout the production process we use solely water flowing from a natural source, that collects into an uncontaminated reservoir.
Natural colour:
There is no need to add anything to our rum.
