Alipús San Juan Mezcal 48% – Traditional craftsmanship from the heart of Oaxaca

Alipús San Juan Mezcal 48% is an intense and authentic mezcal from Oaxaca – created for those who want the true taste of Mexican craftsmanship. This mezcal is a pure expression of terroir, tradition and passion, and each bottle tells the story of the small producers in the San Juan region.

Alipús was founded in 1999 as an alternative project supported by Los Danzantes Distillery to promote and give visibility to traditional mezcal producers in Oaxaca. The philosophy is simple: to show the difference between mezcals from different villages – influenced by soil, climate, water and local production methods. Alipús therefore serves as a taste map of Oaxaca.

This San Juan edition is made from 100% Agave Espadín – the most classic and widely used agave variety in mezcal production. With an alcoholic strength of 48%, it delivers power, structure and purity of flavor.

Tasting notes

Aroma: Intense smoky aroma with notes of citrus, warm spices and a subtle sweetness from the baked agave.

Flavor: Robust and complex with distinct nuances of roasted agave, light wood tones and a balanced combination of smoke and freshness.

Finish: Long, warm and persistent with elegant smoke and a distinctive lingering agave note.

Production

Production takes place in a local cooperative where several producers share four traditional copper pot stills. The agaves are harvested by hand and baked in an underground stone oven, giving the characteristic smoke profile. The agave is then crushed by a large horse-drawn stone wheel before the must is fermented in open pine vats. Distillation is done twice in copper pot stills.

The slow and traditional process ensures a mezcal with depth, complexity and a true handcrafted expression.
