A unique vintage with exceptional balance

2021 saw a long, cool growing season, with strong spring winds and variable weather creating small, concentrated grapes with intense aroma. Tolosa was able to harvest late – in late September and early October – resulting in a wine with remarkable balance between acidity, ripeness and depth.

The result is a Pinot Noir that is energetic, complex and silky, showing the most honest interpretation of Edna Valley’s terroir.

Modern and precise winemaking

One third of the wine is fermented with dry stems, adding structure, spice and lift. The majority is fermented in steel tanks to preserve freshness and pure fruit, while a smaller portion is fermented in new oak barrels for subtle, luxurious nuances.

Subsequently, 87% of the wine is aged in 60-gallon French barrels (25% new), while the remainder rested in oval oak barrels for roundness and deep aromatic complexity.
