Thy Spelt-Rye Whisky 48.5% is a characterful Danish whisky that showcases the unique style of Thy Whisky. This whisky is created according to the distillery’s farm-distilling philosophy, where the entire production takes place on the same property. From grain cultivation to distillation and maturation, everything is done locally in Thy.

The whisky is made exclusively from organically grown grain from the distillery’s own fields. The recipe consists of malted spelt, rye and barley. All three grains are naturally part of the farm’s organic crop rotation. The combination results in a whisky with depth, spice and an elegant Nordic character.

After distillation, the whisky is aged in new oak casks. The fresh oak gives both structure and intensity. At the same time, the casks add warm notes of vanilla, caramel and spices that play beautifully with the spicy back notes.

Thy Spelt-Rye is the distillery’s Nordic interpretation of a classic rye whisky. The style is elegant, slightly sweet and spiced with floral nuances. The result is a whisky with personality, balance and a clear connection to the raw materials from Thy.

The color is golden with warm amber tones. The aroma is aromatic with notes of spicy rye, honey and light floral nuances. There are also hints of vanilla and new oak. The taste is rich and elegant with notes of spice, malt and light caramel sweetness. The finish is long, warm and spicy with a soft sweetness.
