The whisky is matured in an Ex-Rye cask, cask 254, which adds a distinctive spicy profile with depth and complexity. Only 257 bottles have been bottled from this enchanting single cask – a true collector’s bottle for the quality-conscious whisky enthusiast.

It’s not cold-filtered and has natural color, meaning you experience the whisky exactly as it developed in the cask. The result is intense, characterful and vibrant London single malt with plenty of personality.

Tasting notes

Nose: Spicy and deep with notes of vanilla, caramel and toasted spices from the rye cask. Hints of honey, ripe fruit and light oak.

Flavor: Rich and powerful with spicy nuances, dark caramel, roasted nuts and a touch of pepper and sweetness. The Ex-Rye cask adds structure and warmth while the distillate retains its fruity elegance.

Finish: Long, warm and spicy with lingering sweetness, oak and delicate spices.

Bimber Distillery – Traditional craftsmanship in the heart of London

Bimber Distillery was founded by passionate whisky enthusiasts with a mission to create exceptional single malt whisky full of character. What sets Bimber apart is their unwavering commitment to traditional methods – rarely seen in modern whisky production.

The journey begins on their own single farm, where 100% of the barley is grown. The barley is traditionally floor-milled, hand-milled and slowly fermented for seven days in handmade wooden vats. Distillation takes place in small pot stills heated by direct fire, giving a unique and intense character. Maturation takes place in carefully selected casks and the whisky is bottled on site at the distillery – full control from field to bottle.
