Kilchoman 9 year STR Single Cask 2011 #231 – 52,6% Islay Single Malt Whisky – Exclusive to Denmark

A rare gem for the serious Islay lover. Kilchoman 9 year STR Single Cask 2011 #231 is bottled exclusively for the Danish market – only 251 bottles in total. Here you get true single cask character with high intensity, clear peat smoke and a distinct cask character from both bourbon and red wine.

Distilled on 12.05.2011 and bottled on 02.11.2020, this whisky has matured for 9 years. First in ex-bourbon casks, where it built up classic vanilla, citrus and maritime freshness. Then a final 15 months in a shaved, toasted, re-charred (STR) red wine cask, adding deep color, structure and layers of red fruit notes.

With a phenol level of 50 PPM, it delivers a distinct, clean and distinctive Kilchoman dry smoke that melds with spicy oak and the sweetness of the red wine barrel. Bottled at cask strength of 52.6% – no coloring and no chill filtration – just as it should be.

Tasting notes

Aroma: Intense peat smoke, fresh citrus and vanilla from the bourbon barrels, lifted by red berries, spicy oak and a light vinous touch.

Flavor: Powerful and concentrated with classic Islay smoke, sweet vanilla, ripe red fruit, spice and a nice balance between the freshness of the bourbon and the depth of the STR cask.

Finish: Long and warm with lingering peat smoke, light tannin from the red wine cask and spicy oak.

Kilchoman Distillery – Islay’s Farm Distillery

Kilchoman Distillery was established in 2005 at Rockside Farm on Islay and is known as Islay’s Farm Distillery. The barley is grown locally, the peat is cut on the island and the entire process – from distillation to maturation and bottling – takes place on Islay. The distillery consistently works without the addition of color and without chill filtration.
