Bimber Distillery was founded by whisky lovers, with a mission to produce high-quality single maly whisky with character, using traditional methods that are rarely seen today.

The journey begins at our single farm, where 100% of our barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in our wooden washbacks that were hand-make at our own cooperage. We use direct fire to heat in hand-selected casks. Finally, we bottle our whisky onsite at our distillery.

Our hand-crafted approch to whisky production passionately combines traditionnal methods, expertise and an absolute commitment to quality.

This small batch release of 5000 bottles has been matured in Ex-Bourbon oak casks.

Bourbon barrels are constructed from Quercus Alba, or white oak, commonly known as American oak. This wood type complements the underlying character of our accessible fruit-forward spirit, impartting sweet, rich vanillaand charamel flavours alongside perfectly balanced spice. Every casks has been specially selected and married toghetter in our hand-made pak vat, before being bottled.
