Domaine Philippe Gavignet Bourgogne Hautes-Côtes de Nuits Blanc – La Montagne 2021

Bourgogne Hautes-Côtes de Nuits Blanc – La Montagne 2021 from Domaine Philippe Gavignet is an elegant and terroir-driven white Burgundy with freshness, minerality and great balance. This Chardonnay comes from higher altitude parcels in Hautes-Côtes de Nuits, where cooler climates provide nerve, precision and aromatic clarity.

Philippe Gavignet has just 0.35 hectares in the La Montagne field. This results in a small and focused production with great attention to detail. The 2021 vintage is crisp and classic with pure fruit and great acid structure.

An ideal wine for fish, shellfish, poultry and creamy dishes – or as a serious glass of white Burgundy in its own right.

Details and vinification

The wine is made from 100% Chardonnay. Pressing and fermentation take place partly in stainless steel tanks and partly in 350-liter barrels. Half is vinified in steel to preserve freshness. The other half ferments in barrels to add structure and depth.

The lees are stirred every 15 days. The wine is then blended and aged in both tank and barrel for 12 months. The result is a harmonious wine with both freshness and creamy texture.

Tasting notes

  • Color: Clear straw yellow with a slight golden hue.
  • Aroma: Citrus, green apples, white flowers and discreet cask.
  • Taste: Fresh and well-structured with ripe citrus, light creamy richness and mineral notes.
  • Finish: Clean, elegant and balanced with great length.
