11 years in ex-sherry butts

This 11-year-old Kilchoman derives its character from ex-sherry butts. The large sherry casks give the whisky a dark, full-bodied, and concentrated style that pairs perfectly with Kilchoman’s powerful Islay smoke.

The sherry casks add layers of dark and dried fruit, spices, nuts, and chocolate. At the same time, the distillery’s fresh citrus and maritime character come through clearly. This creates a whiskey with sweetness, depth, and distinctive peaty smoke.

The whisky is made with heavily peated malt from Port Ellen Maltings at around 50 ppm. The intense peat provides a distinctive smoky character that has the strength to hold its own against the intense sherry casks.

Tasting Notes

Nose: Intense and rich with dark fruit, peaty smoke, and sweet sherry. Notes of raisins, dates, and dark chocolate are followed by toasted nuts, orange peel, and warm spices.

Taste: Powerful and concentrated with dark fruits, syrup, and chocolate. Toasted nuts and spices develop alongside black pepper and a pronounced wave of peat smoke. The high alcohol content provides great body and intensity.

Finish: Long, warm, and smoky with dark fruit, spices, and chocolate. The sherry’s sweetness lingers alongside peat smoke, oak, and a light maritime hint.

Kilchoman Family Collection

The Family Collection is crafted from some of the exceptional casks that the Wills family discovers during their annual review of the whisky in Kilchoman’s warehouses. Each member of the founding family helps select whiskies that reflect their personal preferences and Kilchoman’s evolution.

The first Family Collection consists of four whiskies aged 11, 14, 18, and 20 years, respectively. The series offers a rare opportunity to experience older Kilchoman whiskies and see how the distillery’s distinctive spirit evolves through many years of cask aging.

Kilchoman Distillery – the family-owned distillery on Islay

Kilchoman Distillery was founded by Anthony Wills in 2005 at Rockside Farm on Islay. The goal was to create an independent family-owned distillery that respects the island’s long-standing traditions.

Today, the Wills family continues to run Kilchoman. Over more than two decades, the family has built up an impressive stock of whisky. The oldest casks now reveal a new and more mature side of the distillery. The Family Collection is therefore also an important chapter in Kilchoman’s history.
