Kilchoman Maury Cask Matured Full-Term Maturation Islay Single Malt 50%

Kilchoman Maury Cask Matured 50% is an intense and unusual Islay Single Malt, where Kilchoman’s classic peaty smoke meets the dark fruit and sweetness of French Maury casks. This is a Limited Edition from 2026 and also marks the first time Kilchoman has released a whisky fully matured in this particular type of cask.

This is by no means a short finish. The whisky has undergone full-term maturation and has thus spent its entire maturation period in ex-Maury casks. This imparts a distinctive cask character with dark fruit, honey, and spices, which harmonize beautifully with Kilchoman’s peaty smoke and fresh citrus.

100% matured in ex-Maury casks

Kilchoman selected 19 Maury butts, which were filled with whisky in 2021. These casks were subsequently blended to create this special 2026 bottling.

Maury is a sweet, fortified wine from Roussillon in southern France. The wine is made primarily from Grenache Noir and is known for its concentrated fruit, sweetness, and spicy character.

The robust Maury casks add an extra layer of dates, raisins, and dark honey to the whisky’s natural Islay character. At the same time, Kilchoman’s peaty smoke and characteristic citrus freshness come through clearly. This creates an exciting balance between sweetness, fruit, smoke, and spices.

The whiskey has also acquired an impressively deep, reddish color from the casks. It is bottled at 50%, which adds extra intensity and body to the already robust flavor profile.

Tasting Notes

Nose: Rich and dark with dates, raisins, and figs. Salted caramel and dark honey follow, along with fresh orange peel and soft peaty smoke.

Taste: Intense and powerful with dark chocolate, sweet syrup, and warming spices. The peat smoke becomes more pronounced on the palate and is balanced by the rich, dark fruit from the Maury casks.

Finish: Long and complex with dried fruit, cocoa, and earthy peat smoke. The finish offers a pleasant dry spiciness that provides a nice counterpoint to the whisky’s fruity sweetness.

Kilchoman Distillery – Islay’s farm distillery

Kilchoman Distillery was founded by Anthony Wills in 2005 at Rockside Farm on Islay. The vision was to bring the tradition of small farm distilleries back to the island and create whiskey with a clear connection between ingredients, craftsmanship, and Islay’s unique natural environment.

The Wills family continues to run Kilchoman. The distillery is particularly known for its smoky and fruity style, as well as its innovative approach to different cask types. Several of Kilchoman’s Limited Editions are fully matured in their chosen cask type rather than just receiving a short finish.
